Here is something for Jen and Sue, thanks for the hard work!
MeanBruce’s Ultimate Peanut Butter Shortbread Cookies
1stick salted butter [room temperature]
2/3Cup smooth peanut butter
1/2Cup light brown sugar
1.5teaspoon vanilla extract
1Cup unbleached flour
Heat oven to 350degrees, wipe thin layer of butter over surface of insulated cookie sheet.
Combine butter, peanut butter, and sugar in mixing bowl using a large mixing spoon. Add the vanilla and mix just until combined, add flour and mix slowly with your spoon just until combined.
Place 1.5inch round balls of cookie dough [3wide X 4long] 12 total on prepared cookie sheet, flatten cookies with bottom of wet glass, Cook for 18 to 20 minutes, or until light golden brown. Cool 10 to 15 minutes.
Makes 12 large cookies, these things are amazing light fluffy velvety texture, they melt in your mouth, serve them with milk or water, they are very rich.
When you taste them, you will understand where the Ultimate comes from, Enjoy!

Dear Meanbruce,we are so grad that you enjoy reading our post.And many thanks for the Ultimate Peanut Butter Shortbread Cookies.It seems that the cookies are so delicious,just as you describe “melt in your mouth,serve them with milk or water”,it might be a good choice for breakfast,I’m a little hungry.I think I will try to make the cookies by myself.Thanks!
